Ingredients
- 2 tbsp cannabutter, melted
- 1 1/2 cups all-purpose flour
- 2 tbsp brown sugar*
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 bananas**, mashed
- 1 egg
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips
Notes:
* You can use granulated sugar instead.
** Use very ripe bananas that are almost brown. They are easier to smash and make pancakes sweeter!
Step-by-Step Instructions
- Preheat a large skillet or griddle to high heat, or 350 degrees. Spray with non-stick spray or coat with butter.Â
- In a large bowl sift together the dry ingredients; flour, sugar, baking powder, salt and cinnamon.
- In another bowl, mash the bananas with a fork. Mix in egg, milk, cannabutter and vanilla until well blended and smooth.
- Add banana mixture to dry mixture and stir until just combined. Don’t over-mix the batter! Mix in chocolate chips.Â
- Spray the griddle or pan with non-stick spray or coat with butter.
- Drop about 1/4 cup of batter onto the hot surface. Cook until small bubbles form over the top of the pancake batter, flip. Cook for about 3-4 minutes per side until light golden brown.
- Serve with maple syrup or with fresh fruits.
Blueberry Weed Muffins
Time: 45 minutes, Yield: 12 muffins
Ingredients
- 1/2 cup cannabutter, softened to room temperature
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 2 tsp baking powder
- 1 large egg
- 1/3 to 1/2 cup milk
- 1 1/2 tsp vanilla extract
- 1 cup fresh blueberries*
Notes:
* If you use frozen blueberries, do not thaw them.
Step-by-Step Instructions
- Preheat the oven to 425°F. Spray a muffin pan with nonstick cooking spray or use cupcake liners.
- In a large bowl, sift together the dry ingredients: flour, baking soda, baking powder, and salt. Set aside.
- In another large bowl, beat the cannabutter and granulated sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Beat in vanilla extract until combined.
- Add the dry ingredients and milk into the bowl and beat until combined. Do not overmix. Fold in the blueberries.
- Scoop the batter into liners, filling them all the way to the top. Sprinkle a little sugar on top of each muffin.
- Bake for 5 minutes at 425 °F then, reduce to 350°F. Bake for an additional 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for 5 minutes in the pan before transferring to a cooling rack to continue cooling.
Muffins stay fresh in an airtight container or sealable plastic bag at room temperature for a few days or in the refrigerator for up to 1 week.
Marijuana French Toast
Time: 20 minutes, Yield: 2 servings
Ingredients
- 1 tbsp cannabutter, plus extra for serving
- 2 large eggs
- 3/4 cup milk*
- 2 tbsp granulated sugar
- 1/4 tsp ground cinnamon (optional)
- 1/4 tsp ground nutmeg (optional)
- 1/2 tsp vanilla extract (optional)
- 4 thick sliced bread**
Notes:
* You can substitute any type of milk including heavy cream, almond milk, and even coconut milk.
** Use brioche bread to upgrade your french toast!
Step-by-Step Instructions
- Beat together egg, vanilla, sugar, cinnamon, and nutmeg in a shallow dish with a whisk. Stir in milk.
- Dip each slice of bread in egg mixture, soaking both sides evenly.
- Melt the cannabutter on a griddle or skillet over medium heat. Cook bread slices until golden brown on both sides. Serve with extra cannabutter, maple syrup, and fresh fruit.
